Description
The Carricante and Catarratto grapes are grown on poor volcanic soil at an altitude of around 700m, where there is good temperature variation between day and night. The fruit is hand harvested well into October.
The carefully selected grapes are cold macerated for 24 hours and, after destemming, are pressed softly. The juice is left to ferment at a controlled temperature of 15-18°C for approximately 20-25 days. bottled in January after the vintage following a short maturation in tonneaux.
